Fights Cancer: Numerous anticancer studies have focused on mangosteen. It contains at least 20 xanthones. A 2008 study found that one xanthone found in the fruit has cancer preventative abilities. A recent 2016 study examined the anticancer activity of the fruit on human breast cancer cells. The study concluded that mangosteen induced the death of cancer cells. The extract from the fruit has also shown to be effective in fighting skin cancer.(2)

One study found that the fruit contains compounds similar to prescription drug acarbose, which is used to treat symptoms of type 2 diabetes. OPC’s contain high levels of antioxidants that demonstrate antibacterial, antiviral, anti-carcinogenic, anti-inflammatory, anti-allergic, and vasodilatory actions.(2)

Cashews!! ?

I really enjoy eating cashews!  There are so many uses for this buttery flavored nut such as … nut milk or cream , flour, tasty vegan and Asian dishes as well as snacks.  You can really get creative with dehydrated varied flavored cashew and dried fruit snacks. I always soak my cashew nuts for a few hours, as its easier for your body to digest.  Soaking nuts realeases the enzyme inhibitors.  Cashews contain vitamins A, K, B6, and many minerals such as copper, phosphorus, zinc, magnesium, iron and selenium.  All of these minerals are essential for optimal body function.

Heating Foods and Temps that kill enzymes

About 75% of my diet is RAW uncooked food, and I never dehydrate my food over 105 F.  Prolonged heating of foods at higher temperatures kill enzymes, and usually dehydrated foods are heated several hours at a time, so if your looking for maximum nutritional value when you eat foods, just don’t over heat.  When using the stovetop you shouldn’t heat past  118 F.  You want your vegetable to look bright and vibrant not dull, brown/grey and dead.  I always keep a food thermometer close by.
